The White Truffle, the undisputed king of truffles, grows spontaneously – never cultivated, never seeded – in prevalently damp soil in the shady mixed woodlands of linden, oak and poplar in the valleys of the magnificent San Miniato (Pisa) hill country, a habitat that exalts the flavour and aroma of the truffle.
The Oasi del Tartufo di San Miniato is located here; its lands are used primarily for demonstrations of truffle hunting, exciting experiences in the company of expert truffle hunters and their just-as-expert dogs, of the Lagotti and Meticci Sanminiatesi breeds.

The most highly-prized truffle of the San Miniato hills is the Tuber magnatum Pico (a white truffle variety). The truffle is a fungus that grows spontaneously underground at a few centimetres depth in a limited number of areas distinguished by a rare combination of forest fauna and geological substrate.
The value of the White Truffle of San Miniato is given by its rarity and its incomparable flavour and aroma.

San Miniato, in the heart of Tuscany, is a city rich in history and art. The fertile soil of its woodlands is the custodian of the precious White Truffle of San Miniato (Tuber magnatum Pico). The city is also the proud holder of the record for the largest truffle ever found (2520 g), which was given as a gift to President Eisenhower in 1954.
Strict rules and even a regional law define how the truffles of this area may be gathered and marketed. In any case, gathering is always conducted with moderation and selectivity.
